The Tokyo branch of a renowned Hakata ramen shop (they also have a branch at the Shin-Yokohama Ramen Museum), they serve thin, slightly chewy noodles in a pork-based broth ("red" or "white"), with or without extra chashu. You can add your own freshly grated garlic -- you'll find bowls of whole garlic cloves on the counter along with graters.
