Here inside the Mandarin Hotel's 38th-floor lounge, the seven-seat Tapas Molecular Bar serves cutting-edge modern cuisine. Twenty-one plates of highly inventive, deconstructivist, very tasty morsels are presented over the course of two hours (Y29,095).

A meal here is an entertaining and interactive experience full of exotic textures and relevatory flavor combinations. Despite the occasional science-lab feel (test tubes with mysterious liquids, beakers of liquid nitrogen), the high quality of the results elevates this beyond mere gimmickry. Seatings are at 6 and 8:30pm, and reservations are required.
