Yamamotoya is one of the best-known purveyors of miso-nikomi udon, flat udon noodles prepared in a miso-rich, bonito-based soup. The noodles are thick and chewy, and the soup is filled with fish cakes, leeks, egg, and many optional ingredients such as Nagoya cochin chicken.
