Simple, unpreten-
tious fusion cuisine
may sound like a
contradiction in
terms, but Furuto-
shi's chef somehow
manages to produce
down-home cooking
even while using
ingredients from
halfway around the
world. Flavors are
artfully balanced,
seasonings are con-
fident.

The generous soft-
shell crab appetizer
(Y1300) works per-
fectly with its
yogurt-basil dress-
ing; the grilled
tuna main (Y2300) in
a subtle yuzu-pepper
sauce comes with a
homely ratatouille
on the side. The
large pasta section
includes a risotto
of the day - ours
was a delightfully
simple combination
of gorgonzola and
spinach. Maybe we
should just call the
cooking here "Tokyo
cuisine" and leave
it at that.

Furutoshi's decor is
stunning, with spa-
cious seating and a
pleasant no-smoking
section. There are a
few private rooms
that can be screened
off for privacy, and
a large downstairs
bar area. The large
New World wine list
is well chosen and
reasonably priced;
there's also a cock-
tail menu.
