The Shoto-Kamiyama
neighborhood hosts a
small cadre of fine
restaurants, sup-
ported by discrimi-
nating residents and
cosmopolitan NHK-
ites. Hachi-uta is a
welcome addition to
this roster.
The name means
"Eight lyric poems",
which refers to the
team of eight which
runs this new Kappo-
Bistro. Their food-
buyer is a key mem-
ber of the octet:
every dish, without
exception, respected
and asserted its
carefully selected
ingredients' fresh-
ness and unique
flavors.
Surprisingly, this
was apparent even in
the lowly dinner
salad (Y700), which
was liberally popu-
lated with baby
mizuna, mint, and
other tasty baby-
greens, plus deli-
cious vine-ripened
tomatoes; its zesty
Vietnamese-accented
dressing added poet-
ry to the mix.
When we asked about
the ingredients, we
were shown a lami-
nated chart with
pictures of a dozen
fresh greens, and
informed about the
daily choices. Then
came the wonderful
appetizer platter:
fine silken homemade
tofu, simmered in a
smoky dashi; gelled
plum-wine, as tart
as a good lemon-
meringue pie fill-
ing, and simply
divine--served cool;
an enticing surimi
dish, which pre-
served the textures
and flavors of its
constituent scal-
lops, bream and cod;
plus two other
items, all for Y900.
Every other category
of dish shone, from
tender beef-tongue
steak with ponzu,
succulent chicken-
breast with garlic
and garlic shoots,
one of the best
cabbage stir-fries
in the city, steamed
scallop dumplings
wrapped in yuba.
With nearly all
dishes under Y900,
it's no wonder that
the place is packed
on weekends.
To complement the
meal, there is a
selection of dry
French and Italian
table wines (all
under Y3500), dry
junmai sakes, and
"specially selected"
shochu. Finally, a
decent cheese plat-
ter and tasty selec-
tion of homemade
desserts await the
discriminating.
Designed with an eye
for the Japanese
modern, the upstairs
offers comfort and
intimacy. There are
two private dining
rooms, for four and
eight, and the ser-
vice is prompt and
attentive.
Though there isn't
an English menu, one
of the waiters is
comfortable speaking
and joking in Eng-
lish. All in all, a
winning combination
which has caught the
dining pulse of the
season.
